The recipe that we offer today is perfect as a recipe for a winter dinner. The protagonist is mountain lard, irresistible and tasty, accompanied by potatoes and radicchio, two ingredients that cannot be missing in the kitchens at this time.

This easy recipe is ideal for a mountain dinner, near the heat of the chimney, after a day in the ski slopes.
Is a rich dish, nourishing and delicious of a nutritional point of view, that will satisfy your guests.

Here are the ingredients for this recipe with potatoes, radicchio and mountain lard!

Ingredients for four people:

For gnocchis
300 g of rotzo potatoes
20 g of grated Grana Padano cheese
35 g of butter
35g of eggs
35g of flour
A pinch of grated nutmeg
Salt and pepper

For complete
500 g of red radicchio from Treviso
Mountain lard
Grana Padano cheese
50g of parsley
Balsamic vinegar
Extra virgin oil
Salt and pepper

Clean the potatoes and boil them in salted boil water. Drain them, let them cool and pass them.
Mix the potatoes with salt, nutmeg, grana Padano cheese and pepper, then add the melted butter.
When the dough is cold add the eggs already mixed, finally incorporate the flour and work the mixture quickly.

From the gnocchi. Take the red radicchio and wash it. Cut into strips and salted it in a little extra virgin olive oil and balsamic vinegar.
Cook the gnocchi in salted water and collect them with a slotted spoon when they already come to the surface. Sautee the gnocchi with a veil of parmesan and lay them on surface of radicchio.

Finally roll them with thinner slices of lard, of about 4 × 6 cm.
For the garnish, prepare the parsley oil by blending 50 ml of oil with the parsley leaves.
